Easter brunch menu ideas

For anyone who has followed me for awhile, you know my forte is dinner and not breakfast. My family has fended for themselves in the morning ever since the kids were big enough to make toast, grab a yogurt and peel a banana. We all have our weaknesses! That said, there are a few times a year when I put some effort into breakfast. Easter is one of those times. Here are my menu suggestions to make your Easter breakfast special.

This is my newest breakfast creation, although these skillets would work nicely for a quick breakfast-for-dinner meal too. They are so easy to prepare that I have actually made them for non-holiday breakfasts. In fact, I have even whipped these meals-in-a-skillet up for weekday breakfasts. If you have tried my Incredible bacon-wrapped turkey, you know how fun weaving bacon is and how much everybody oohs and ahhs about anything involving woven bacon. These tasty skillets take 5 minutes to prepare and then the oven does all the work.

You need these cute little cast iron pans from Lodge to make this dish. You will find all kinds of uses for these fun single-serving pans. think Mac and cheese, Apple crumble and Corned beef hash for starters.

Aebleskiver pancakes with berriesAebleskivers | Something New For Dinner

My friend Sue introduced me to these tasty little morsels. They are Danish stuffed pancakes. You  can stuff them with something sweet or you can go a savory route. Here is my recipe for berry-stuffed aebleskivers.

You will need an aebleskiver pan to make these. You can use a traditional cast iron aebleskiver pan or a non-stick version.

This dish is a family favorite. It is easy to make and presents as a beautiful puffed pillow and will make your kitchen smell divine.

These scrumptious little morsels can be made in advance and are a nice addition to a breakfast buffet. They are crustless and contain no gluten.

This is a great solution to Easter breakfast if you want to make it ahead of time and spend more time with Easter morning activities than you want to spend at the table. Layered with yogurt, coconut milk-simmered quinoa, fresh mango and granola, these handy jars are a delicious way to enjoy breakfast on the go. I use these cute little Italian mason jars for these breakfast parfaits as well as my Avocado shrimp appetizer jars and my Grilled peach and amaretti dessert parfaits.

 

Minted fruit saladMinted Fruit Salad | Something New For Dinner

A handful of chopped mint transforms a fresh fruit salad into something special. No other dressing needed. Your guests will ask you "What did you put on this salad that makes it sooos good?" I learned this trick from my friend Carol years ago.

What would a holiday breakfast be without bacon? I used to hate making bacon on the stove. As much as I love a good piece of bacon, I hate cleaning up the mess. That is until my friend Sue taught me how to cook bacon in the oven. Once you've tried this method you will never go back to frying bacon on the stove. For extra special bacon sprinkle it with a little brown sugar and cracked pepper like my friend Sue does. Yum!
