KALE AND LENTIL CHOPPED GREEK SALAD

This modern version of a Greek salad was inspired by a salad I ate at Asteras Beach Club on the coast of Glyfada, which is known as the Athens Riviera. It is fresh uber healthy and a perfect example of the Mediterranean diet. I find it quite filling as is, but you can add some grilled chicken or salmon if you desire more protein.
KALE SOUP WITH CHORIZO, POTATOES AND WHITE BEANS

For this kale soup I use lacinato or dinosaur kale, fresh Mexican chorizo, red mini potatoes and cannellini white beans. It has similar ingredients to Portuguese kale soup or Caldo Verde, but instead of using chourico sausage, I use Mexican-style chorizo, which is crumblier and spicier.

A flavorful summer salad that is hearty enough for dinner. Make when peaches are ripe and tomatoes are at their peak. A few crumbles of bacon boosts umami and the creamy non-dairy cilantro dressing binds it all together.

A twist on traditional Nicoise Salad, this dish uses lightly seared ahi instead of canned tuna and oven-roasted potatoes and beans instead of boiled potatoes and steamed beans. The result is a salad for dinner that is suitable for either a weeknight meal or casual entertaining.

This vegetable-dense spring crostini platter does dual duty as an appetizer platter or a complete meal. A luscious ball of burrata & salty prosciutto round it out. Serve with my Spanish-style Aperol Gin and Tonic and you have a perfect warm-weather meal.
