The mac & cheese of polenta. This is a wonderful foundation for Wild mushroom stew, marinara sauce or any hearty stew or pasta sauce.

Ingredients

Scale
  • 2.5 cups water
  • 2.5 cups milk
  • 4 T butter
  • 1 cup polenta
  • 1.5 ounces cup crumbled gorgonzola cheese, about 1/4 cup
  • 1.5 ounces crumbled goat cheese, about 1/4 cup
  • 1.5 ounces grated parmigiano reggiano cheese, about 1/4 cup
  • 1.5 ounces fontina cheese, cut in small pieces, about 1/4 cup

Instructions

  1. Bring milk, water and butter to a boil in a saucepan. Stir in polenta. Reduce heat and continue to to cook for about 6 to 7 minutes. Remove from heat and stir in cheeses and season with salt and pepper. Serve immediately.
