A delicious tropical cocktail inspired by a visit to a pearl farm on Rang Yai island in the Andaman sea.

Ingredients

Scale
  • A glass full of ice
  • 4 ounces pineapple juice
  • 1 1/2 ounce white rum
  • 3/4 ounce of coconut milk, preferably Aroy-D
  • Squeeze of lime, cut Thai-style
  • Sprig of mint

Instructions

  1. Fill a highball glass with ice. Add pineapple juice, then rum, then coconut milk and stir. Garnish with a squeeze of lime and a sprig of mint.
