KALE AND LENTIL CHOPPED GREEK SALAD

This modern version of a Greek salad was inspired by a salad I ate at Asteras Beach Club on the coast of Glyfada, which is known as the Athens Riviera. It is fresh uber healthy and a perfect example of the Mediterranean diet. I find it quite filling as is, but you can add some grilled chicken or salmon if you desire more protein.

My version of Laotian Larb salad has been modified for access to readily available ingredients in the U.S. It is an intensely flavorful salad that uses Thai sweet, sour, salty, spicy and bitter flavors to create a delicious salad that stands alone as a complete meal. Serve as a tossed salad, as lettuce wraps or pack in mason jars for lunch.

Why do I love blood orange margaritas? Blood oranges are gorgeous. I love their red, orange and pink color. Blood oranges are tarter than regular orange juice, so they work to keep the margarita not too sweet, but still refreshing. Make these vibrant cocktails between December and May when blood oranges are in season.

Pan seared scallops are quick and easy to make. We take them up a notch by wrapping them in prosciutto and serving them on a bed of corn and roasted pepper risotto. We place red pepper X's between each round mollusk so the serving plate reads " O X O X O," or Hug, Kiss, Hug, Kiss, Hug. What could be more appropriate on Valentine's Day?

The best sous vide vegetables are root vegetables. These sous vide carrots are fresh, rich and delicious. They are cooked at a relatively high sous vide temperature of 183 degrees F and then briefly sauteed in a pan to create a glaze. The prep is simple and you can ignore them for an hour while they hang out in the sous vide bath. Sous vide carrots cook in their own juices giving them a dense carrot flavor and great texture.
