Lettuce Wraps 

Lettuce wraps are a delicious approach to dinner in the summer. They are light, flavorful, low carb and easy on the belly and thighs. Here are my family's favorite lettuce wrap dishes and just the thing for a light summer meal.

Chicken and Mango Lettuce WrapsChicken & Mango Lettuce Wraps | Something New For Dinner

This Thai-inspired recipe uses a balance of sweet, sour, salty and bitter flavors. The wraps can be served as an appetizer or as an entire meal.  I serve all finished ingredients on a large serving platter for guests to assemble to their personal taste. Pass the bottle of sriracha sauce for those who like extra heat.

These lick-your-fingers and smack-your-lips wraps are definitely my favorite. Grilling the pineapple brings out incredible sweetness.  I make one Thai-style sauce and use half to marinate the pork and the remaining half to serve with the finished lettuce wraps. 

 

Turkey and Cranberry Lettuce WrapsTurkey & Cranberry Lettuce Wraps | Something New For Dinner

I originally developed this recipe to use leftover Thanksgiving turkey and to create a light recipe to help reverse the massive amount of calories we ingest over the holidays. You don't have to wait for Thanksgiving and roast an entire turkey to enjoy this recipe. I roast a couple turkey thighs in the oven with a little olive oil, salt and pepper on 350 degrees for 45 minutes to an hour. Alternatively, you can use roast chicken. I substitute fresh peaches in the summer for the Fuyu persimmons. You can also substitute fresh cherries for grapes. Delicious!

 

Turkey, Wild Rice and Black Rice SaladA healthy make-ahead wild and black rice salad studded with turkey, black cherries and walnuts is great for a buffet or potluck and a grab-and-go lunch.

I like to serve this wild rice salad as a filling for lettuce wraps. I tuck a couple slices of mango into each wrap for a fresh burst of flavor to this antioxidant-rich recipe. 

 

About Lettuce Wraps

You can use a variety of lettuce and even kale to make lettuce wraps. I use butter lettuce, romaine, kale and iceberg lettuce. Making Iceberg lettuce cups can be a little tricky. If you are not careful you wind up with lettuce strips instead of lettuce cups. Check out my post to find out how to make lettuce cups. Tip: Whatever kind of lettuce you use, wash, dry and chill the lettuce in advance. Water on your lettuce will not give you the clean, crisp lettuce wrap experience that you want.
