Baharat – Middle Eastern spice blend

Baharat is a Middle Eastern spice blend that varies by cook and by region. The word baharat translates simply to "spice." Typical ingredients include: pepper, lampong, pepper, cinnamon, coriander, cumin, cloves, ginger, cayenne, cardamom and nutmeg. Other ingredients might include: mint, sumac, saffron and turmeric and Spanish paprika. Baharat is used in lamb, chicken, fish and vegetable dishes. It is also used in soups, stews and couscous.
