Slow-Cooked Carnitas with Minted Tomatillo Sauce
What dad doesn't love carnitas? The problem is that really good traditional carnitas are hard to make at home and get their wonderful flavor from being deep fried in a vat of lard. I discovered Kenji Lopez's method of making healthy carnitas at home with olive oil, onions, citrus and herbs and it is down right amazing. Here is my recipe using Kenji's method. Don't skip the Minted Tomatillo Sauce. Who knew how incredibly delicious mint is in Mexican food?

Steak and potatoes gets a big flavor lift when served with a slathering of Chimichurri Sauce, the Argentinean answer to Italian pesto. Serve this easy-to-make dish with some sliced tomatoes and you have a complete meal dad will love.
