A fusion dish of French de Puy lentils and Middle Eastern tabbouleh ingredients is a fusion of some of my favorite ingredients. I add fresh pomegranate seeds and pomegranate molasses for a flavor pop that contrasts with the earthy lentils.

Bruschetta is one of those perfect foods. It is healthy, quick, versatile and inexpensive to make. It can be eaten as an appetizer or as an entire meal. It makes a great Meatless Monday meal to reduce your carbon footprint. I can't think of anything but good things when it comes to bruschetta.

These make-ahead polenta appetizers are delicious and healthy. Grilled polenta is smeared with honeyed cheese and topped with slow cooked tomatoes, caramelized onions and melted peppers.

Cioppino, or fisherman's stew, is a great dish for entertaining and surprisingly simple to make. Better yet, it is very flexible, buy whatever seafood is fresh and inexpensive and you can't go wrong.
