9 Cinco de Mayo recipes

Cinco de Mayo is one of my favorite holidays, because like Thanksgiving, it is really just about food. Well...maybe food and tequila. Either way, Cinco de Mayo is a good excuse to eat some great Mexican food and wash it down with a margarita or two. Here are 9 recipes from our archives for your Cinco de Mayo festivities.

Fish tacos with cilantro

These are my favorite fish tacos. They are cooked on the stove top with no batter and no deep-frying. Better still, you can make them in under an hour start-to-finish, including 20 minutes to marinate the fish. They are gluten-free if you serve with corn tortillas.

Grilled chipotle glazed steak salad

This flavorful steak salad is a meal in itself. It can be prepared in under an hour, but the steak is best when marinated for several hours or overnight.

Quinoa, black bean, red pepper and corn salad

By adding quinoa to this classic bean salad, this dish becomes a meal in itself. Make it in under 30 minutes.

Cheesy corn custard

These cheesy corn custard cups are a great Mexican-inspired side dish. They are super easy and quick to make, and you will have fun creating variations of your own.

Chicken tortilla soup

If I have a signature soup this is it. I make a huge batch and stash bags of it in the freezer for nights I don't feel like cooking.

Fish ceviche

Fish ceviche is one of my favorite warm-weather appetizers. Serve with some tortilla chips and you can't go wrong.

Killer chicken tacos

These are healthy, flavorful, veggie-filled grilled chicken tacos. The secret is in the rub, a blend of Spanish smoked paprika, chili powder, granulated garlic, granulated onion and brown sugar. I make a big batch of the rub and keep it on hand.

Cinco de Mayo cocktails

Cinco de Mayo wouldn't be right without a little tequila. Here are two of my favorite tequila cocktails:

Paloma cocktail

The Paloma is a tasty alternative to your standard margarita. Use fresh grapefruit juice for a very refreshing cocktail.

Jalapeno margarita

If you like a little heat, you will enjoy this jalapeno margarita. My favorite part is the chili powder and salt rim.
