Passion Fruit Margarita

I have had a gangbuster passion fruit harvest this year and have been trying a variety of ways to use these glorious fruits. This new recipe for a passion fruit margarita is one of my favorites. I am not much of a tequila drinker, but this cocktail has converted me. If you can't get your hands on fresh passionfruit, there is a great passion fruit puree that contains nothing but passion fruit and a bit of sugar. You may have to adjust the simple sugar and amount of passion fruit puree you use, but the basic recipe is still the same. You will just miss out on the cute little passion fruit black seeds.

Tequila Makes a Difference in this Passion Fruit Margarita
Don't make this cocktail with any old tequila. It is best made with a good añejo tequila. I use Patrón extra añejo. I know, many people will tell you this tequila should only be drunk straight up. Cocktail Ice Cubes
For this passion fruit margarita or really almost any cocktail, your choice of ice cubes can make a huge difference. For a highball drink like this one, you want one, or maybe two large ice cubes. Why? Aside from looking cool, the larger ice cubes take longer to melt and don't immediately dilute your drink. Make Your Own Simple Sugar
You can buy simple sugar, but there really is no need to. Make your own by mixing 1 cup of sugar and 1 cup of water in a pan. Bring to a boil and reduce the heat to very low for 10 minutes. If you want you can infuse it with flavor by adding a strip of citrus zest, fresh ginger slices, a cinnamon stick, fresh herbs or whatever flavoring strikes your fancy. Let the flavoring steep in the hot sugar and water. The longer you let it steep, the stronger the flavor will be. This passion fruit margarita is made with fresh passion fruit and a good añejo aged tequila. The passion fruit smells heavenly and complements a smoky tequila.

Ingredients

- 2 ounces good dark tequila (don’t use the cheap stuff)
- 1/2 ounce Grand Marnier or Cointreau
- Juice from 1/2 lime
- 1/2 ounce simple sugar (see headnotes for how to make your own)
- Fruit, pulp and seeds from 1/2 to 1 whole passion fruit, depending on size of fruit
- 2 ounces of soda water (optional)
- Mint sprig, passion fruit or other edible flowers for garnish
Instructions
- Stir together tequila, Grand Marnier, lime, simple sugar and passion fruit. Pour into highball glass over one large ice cube. Finish with a topper of soda water. Garnish with mint or a passionfruit flower or other edible flowers.
Notes
You will want to adjust the ingredients in this cocktail to your own personal preference. Some may not care for any simple sugar and others may want a bit more than what the recipe calls for. Likewise with the lime juice, vary the amount depending on how tart you like it. Finally, this drink can be made without the soda water if you like a more booze forward cocktail. I personally like a hefty splash of soda water in mine.
