Aebleskiver Pancakes with Berries

My friend Sue introduced me to aebleskivers (or ebleskivers), tasty little stuffed pastries that are somewhere between a pancake and a popover. Aebleskivers are Danish in origin and the literal translation is "apple slices" because the original recipe was stuffed with applesauce and apple slices. The hardest thing about aebleskivers is pronouncing them. Searching on Google, I found the following pronunciations:
- AI blah skee wah
- EB el ski ver
- EB el sku wyr
I suggest however you pronounce aebleskiver, you say quickly and with confidence and no one will know the difference, unless of course you are speaking to a Dane.
Aebleskivers are semi-spherical in shape, crispy on the outside and airy on the inside like a popover. They are traditionally made in special cast iron pans:

Each pan of aebleskivers takes 8 to 10 minutes to make, so if I'm serving a crowd I use two pans so I can turn them out quickly.
Breakfast or dessert
In Denmark aebleskivers are traditionally eaten for dessert at Christmas time and served with glögg, a spiced mulled wine. In the U.S., aebleskivers have become a popular breakfast dish.

Sweet fillings
Aebleskivers can be stuffed with either sweet or savory filling. Sue's favorite filling is berries and jam. Other sweet options are Nutella and banana, jam and a little whipped cream cheese, or the traditional apple sauce and sauteed apple slices. Sweet aebleskivers can be served with a little maple syrup.
Savory fillings
Savory fillings can be made with a little ham and cheese, or really just about any filling you can imagine. Try grilled onions, sundried tomatoes, artichoke hearts, sauteed mushrooms, or when in doubt, bacon. Eliminate the sugar from the batter for savory aebleskivers and consider adding some chopped herbs, such as chives to the batter.
Chopsticks, wooden skewers or knitting needles
When Sue showed me how to make aebleskivers I was surprised to see her use a pair of extra long chopsticks to flip them. Chopsticks work great, but so do wooden skewers or knitting needles.
Tip
Like Yorkshire pudding, it is important to get the pan very hot and then heat the butter until it sizzles before you add batter to the pan. This is how you achieve a crispy on the outside, airy on the inside aebleskiver.
Aebleskiver pancakes with berries
Aebleskivers are a delicious Danish filled pastry that is somewhere between a pancake and a popover. Traditionally served during the Christmas holidays, aebleskivers can be eaten for breakfast or dessert.

Ingredients
- 1 3/4 cups all-purpose flour
- 3/4 t baking soda
- 1 t baking powder
- 1 1/2 T sugar
- 1/2 t salt
- 3 eggs, separated
- 1 3/4 cups buttermilk
- 1/2 stick butter, melted
- 2 cups berries
- 1 cup berry jam
- 1/2 cup powdered sugar
- Maple syrup (optional)
Instructions
- Set out three bowls, one to mix the dry ingredients, one to mix the wet ingredients and one to whip the egg whites.
- In the first bowl, combine the first 5 ingredients and set aside.
- In the second bowl, whisk together the egg yolks and the buttermilk. Then fold the egg and buttermilk mixture into the dry ingredients to combine.
- In the third bowl, beat the egg whites with an electric mixer until stiff peaks form.
- Fold half of the egg whites into the batter with a rubber spatula to combine. Fold in the remaining egg whites.
- Heat the aebleskiver pan over medium heat until a drop of water sizzles when you drop it in the pan. Add 1/2 t melted butter to each of the depressions in the aebleskiver pan. Continue heating until the butter begins to sizzle and bubble.
- Add one tablespoon of batter to each of the wells and cook until bottoms are golden brown – 3 or 4 minutes.
- Add a teaspoon of jam and a few berries to the center of each aebleskiver. Add another spoonful of batter on top of the berries for each pancake. Use just enough batter to cover the berries.
- Using chopsticks, wooden skewers or knitting needles, flip each of the aebleskivers and cook until golden, another 3 or 4 minutes.
- Transfer to a serving platter and dust the aebleskivers with powdered sugar by sifting through a mesh colander.
- Repeat until all the batter is used. Serve hot with maple syrup.
