10 great Easter brunch ideas
Easter brunch is always a fun meal, particularly when you have little kids in the house. Below are a collection of recipes from our archives that work well for Easter. Many can be made in advance or do not have a lot of preparation time.
Tutu's Hawaiian banana bread
This recipe comes from my mom who I think got the recipe from the Halekulani hotel in Waikiki back in the day. My daughter Margo found one of my old typewritten 5" x 7" recipe cards and made the recipe up in muffin tops. She thought the type-written card was hilarious and couldn't believe we used to type out our recipes. The banana bread is good and I am glad the recipe survived all these years.
Dutch baby apple pancake
This recipe has been a staple Christmas and Easter morning dish at our house. My kids would not have it any other way. It can't be made ahead of time, but you can throw it in the oven while gifts are opened or Easter eggs are hunted down. It is quite dramatic when it come out of the oven. Make sure everyone sees it before this impressive puffy pancake collapses. Traditionally these pancakes are made in cast iron skillets, but I like to bake mine in a cazuela.

Mango yogurt breakfast jars
These are wonderful make-ahead meals in a jar. Just be careful, if you make them once your family will want you to make them all the time. I start with homemade yogurt, because it is so much better than store bought. See my recipe for honey yogurt and the yogurt maker I use. You can always take a shortcut and use store-bought greek yogurt instead. But if your family loves yogurt, you should try your hand at making it. The process is surprisingly quick and easy and you will save money making homemade yogurt. You can buy the cute little Italian-made reusable glass jars here.
Turkey hash with brussels sprouts
This recipe takes a little more planning, but the components can be made in advance. It is a healthy alternative to corned beef hash, but if you want to splurge go for this corned beef hash recipe from Bradley Ogden.
Sue's company bacon
Once you have cooked bacon in the oven, you will never fry it on the stove again. My friend Sue taught me how to make this bacon. It is delicious, there is no standing over the hot stove, and there is only a fraction of the mess to deal.
Orzo salad with tomatoes, basil and feta
My friend Susan gave me this recipe and it is a keeper. In fact, this salad really was one of the catalysts for starting Something New For Dinner. I was walking with two friends, Jan and Kim, and they were both lamenting that they didn't know what to make for dinner. After the walk I went home and emailed them this recipe. They both made it, loved it and asked for more. And the idea for Something New For Dinner was born. The one thing I don't know is where this recipe originated from. If anyone recognizes it, please let me know. I'd like to properly attribute it and thank the author!
Watermelon, tomato and strawberry and salad with burrata
Now that strawberries are in season this salad adapted from a watermelon and tomato salad from Andrew Weil's True Food: Seasonal, Sustainable, Simple and Pure cookbook is a great choice. Use whatever fruit is fresh and good. I have used mango, tangerines, a variety of berries and melon. The best part is it takes all of 15 minutes to make and there is no cooking involved.

Ramos gin fizz
If you are looking for a more adult recipe for your Easter, this old school cocktail is the ticket. Invented over 100 years ago in New Orleans, it is still exceptional. A key ingredient is hard-to-find orange flower water, but fortunately you can buy it online here.
