On our recent trip to Thailand we sailed a catamaran throughout the Andaman sea. These island-speckled waters are warm, clear and teeming with beautiful fish. Every day was a new adventure, from stand-up paddle boarding, to snorkeling and diving, to exploring new islands and ports. We saw monkeys on Monkey Beach, gorgeous sunrises and sunsets, caught rides with longtail boats, and explored deep dark hongs or caves. It was truly a trip of a life time.
On one of our last days we discovered an island with a pearl farm on it, much to the delight of the women on our boat. After acquiring a few mementos from our trip, we returned to the boat at cocktail hour. Inspired by our trinkets I came up with this celebratory cocktail, the Thai Pearl. When you are in the mood for something exotic, mix up a Thai pearl, kick up your feet and experience a little Thailand.

Thai Pearl cocktail
A delicious tropical cocktail inspired by a visit to a pearl farm on Rang Yai island in the Andaman sea.

- Yield: 1 cocktail 1x
Ingredients
- A glass full of ice
- 4 ounces pineapple juice
- 1 1/2 ounce white rum
- 3/4 ounce of coconut milk, preferably Aroy-D
- Squeeze of lime, cut Thai-style
- Sprig of mint
Instructions
- Fill a highball glass with ice. Add pineapple juice, then rum, then coconut milk and stir. Garnish with a squeeze of lime and a sprig of mint.
