It is a bright and flavorful salad that is sure to perk you up from any winter doldrums you may be experiencing. It is a festive and healthy addition to a Thanksgiving or Christmas feast, but equally delicious for a weeknight meal.

I make this Holiday Salad with a variety of lettuces. I like it with delicate butter lettuce because I think it lets the passion fruit salad dressing shine. If you are using butter lettuce or any other head lettuce, make sure you wash, spin and chill the lettuce well in advance. Ingredients

- 2 heads butter lettuce, washed, spun and chilled (or 5 ounces spinach, leaf lettuce or mache)
- 2 Fuyu persimmons, sliced into thin wedges
- 1 medium pomegranate, seeded
- 1 pint fresh blueberries
- 2 -3 sliced green onions, green and white parts
- 1 cup chopped walnuts, pecans or macadamia nuts
- 1/2 cup crumbled feta or goat cheese (optional)
- Handful of torn mint leaves
- 1/2 cup Passion Fruit Salad Dressing
Instructions
- Put the lettuce in a salad bowl and layer the remaining salad ingredients on top. Toss with Passion Fruit Salad Dressing. Serve immediately and enjoy.
