This year, I have a bumper crop of passion fruit. I estimate I have nearly 200 on the vine, with about five ripening each day. My vine produces large, purple fruit filled with juicy and sweet passionfruit seeds. They start out green and slowly turn purple. I don't pick them from the vine; I let them ripen and fall to the ground. Then I store them at room temperature until they start to wrinkle. That's when you know they are ripe.
Type of Milk
I use coconut milk from the chilled dairy department, which is meant to be a cow's milk substitute. I like Califa Farms unsweetened organic coconut milk. For the pudding:
- 1/2 cup chia seeds, plus an additional 1 – 2 T if needed for thickness
- 2 cups coconut or almond milk
- 2 T date syrup — honey or other sweeteners can be substituted
- 2 t vanilla paste or extract
- 4 – 6 large passion fruit, seeded, reserve both juice and seeds for the pudding
- 1 pinch salt — kosher, Himalayan or sea salt
Optional toppings:
- Plain Greek yogurt
- Diced mango
- Shredded unsweetened coconut
- Chopped macadamia nuts
- Chopped mint
Instructions
- Put all ingredients into a 1-quart, lidded glass jar
- Stir well, cover and shake.
- Refrigerate for an hour and then shake and stir again.
Notes
- For a more intense passion fruit flavor, add more passion fruit.
- If the pudding is not thick enough after an hour in the fridge, add another tablespoon or two of chia seeds and stir them in. Wait an hour and stir again.
- Chia pudding will keep in the fridge for about 5 days. I’m guessing it will not last that long.
