Pomegranate ginger cocktail | Something New For Dinner The holidays are here and calling for a festive cocktail. This Pomegranate Ginger Cocktail is made to order. It is bright, colorful, delicious and can be made with bourbon, tequila, mezcal or vodka. You can make one or two or batch it for a larger group.

Start with a Ginger and Rosemary-Infused Simple Syrup

Ginger and rosemary-infused simple syrup give this Pomegranate Ginger Cocktail delicious aroma and flavor. It is easy to make. Simply put one part water and one part sugar in a pan, and bring to just a boil. Turn down the heat and stir until sugar is dissolved. Turn off the heat and add slices of smashed fresh ginger and rosemary branches. Allow to steep for 20 minutes. Strain and store the syrup in the fridge until ready to use.

Garnish Makes it Beautiful

I garnish this Pomegranate Ginger cocktail with a chunk of pomegranate and a slice of candied ginger threaded on a holiday toothpick. I particularly like these festive toothpicks with little wooden Christmas trees I found on Amazon. They are also great for Christmas appetizers.

Batch this Pomegranate Ginger Cocktail for a Party

I've written the recipe for this cocktail two ways: 1) to serve two, because who is going to drink one alone?  And 2) for a quantity of 10 cocktails. This is an excellent cocktail to batch. I mix up all the ingredients in a pitcher except for the ginger beer, which I use to top off individual cocktails.

Pick Your Booze

This cocktail works surprisingly well with different liquors. I love it with bourbon and I am not normally a big bourbon fan. It is great with tequila or mezcal or a half and half mixture of both. The mezcal adds a nice smokiness. If you you prefer a clean cocktail without a lot of booze flavor you will be happy with vodka. The choice is yours. I recommend you experiment and try them all.

Use Oversized Ice Cubes

I use oversized ice cubes in my cocktails. They make for a great presentation and are practical because the larger cubes melt slowly and do not dilute the drink. I found these oversized ice cube trays on Amazon that are particularly nice because they have lids. Print

Mix up a couple of these flavorful cocktails for you and your significant other while you wrap presents beside the fire.

Ingredients

Scale
  • 4 ounces either bourbon, vodka, tequila, mezcal or a 50-50 mixture of tequila and mezcal
  • 2 ounces pomegranate juice
  • 1 ounce fresh lemon juice
  • 1 ounce rosemary ginger syrup (recipe follows)
  • Splash of ginger beer
  • A chunk of pomegranate, including peel
  • Slice of candied ginger
  • Long toothpick

Instructions

  1. Put first four ingredients into a cocktail shaker filled halfway with ice. Cover and shake vigorously. Strain into a highball glass with a large ice cube.
  2. Top with a splash of ginger beer and garnish with a chunk of pomegranate and a candied ginger disk threaded onto a long holiday toothpick.

Make a batch of this cocktail to kick off your next holiday celebration. You can batch everything but the ginger beer and then just pour into highball glasses and top with a splash of ginger beer. Cheers!

 

Ingredients

Scale
  • 10 ounces pomegranate juice
  • 5 ounces fresh lemon juice
  • 5 ounces rosemary ginger simple syrup
  • 20 ounces either, bourbon, vodka, tequila mezcal or a 50-50 mixture of tequila and mezcal
  • 20 ounces ginger beer to top cocktail
  • 10 chunks of pomegranate, including peel
  • 10 slices candied ginger
  • 10 long holiday toothpicks

Instructions

  1. Stir together pomegranate juice, lemon juice, rosemary ginger syrup and your choice of alcohol in a pitcher. Store in the fridge until ready to serve.
  2. Stir before serving and pour 4 ounces into each of 10 highball glasses, each outfitted with a large ice cube.
  3. Top with a splash of ginger beer and garnish with a chunk of pomegranate and a slice of candied ginger threaded on a long holiday toothpick.

Ginger Rosemary Simple Syrup

This ginger-rosemary simple syrup is quick to make and will keep in the fridge for a couple weeks.

Ingredients

Scale
  • 1 cup granulated sugar
  • 1 cup water
  • A handful of washed rosemary branches
  • 8 slices of fresh ginger, unpeeled and smashed

Instructions

  1. Put the sugar and water in a pot and heat over medium heat until just before boiling. Reduce heat and stir until sugar is dissolved. Remove from heat and add ginger and rosemary. Allow to steep 15 – 20 minutes and strain into a covered glass jar or pitcher. Keep in the fridge until ready to use.

    This is a cocktail one would get at a high end bar. Made it with bourbon and I don’t even like bourbon – so I thought. Balanced. Not too sweet. Gorgeous. And I love the pomegranate seed garnish. Ate mine and my husbands! Thank you again !!!

    enjoyed making this cocktail again for our holiday party last night. it was a total hit! set a festive mood. everyone of our guest enjoyed one and even two. love the look; that one can select their own choice of alcohol or omit it entirely and add an extra splash of ginger beer. thanks for helping to make for a lovely xmas party! xo
