Buttermilk is the Key
This dressing is made with buttermilk, sour cream, a little mayo and a healthy splash of olive oil. I set off to make a healthier blue cheese dressing, which may very well be an oxymoron. To that end I use a good quality cultured buttermilk. I like Kalona Super Natural that uses a lower temperature pasteurization process that doesn't kill off all the good probiotics. Feeling Guilty About Your Blue Cheese Dressing?
Studies have shown that more important than the "luxury" foods you eat is all the other things you eat. So if a little blue cheese dressing makes you want to devour a plant-forward salad or a plate of roasted vegetables, then I say go for it and do it without guilt. This blue cheese dressing is meant to be seasoned to your particular taste. I season with lemon juice, Worcestershire sauce, garlic powder, salt and pepper. Start with my quantities and then add as you see fit. You can also add a bit of tabasco or other hot sauce if you want, just know that it may change the color of the dressing a bit. Ingredients

- 4 ounces crumbled blue cheese
- 1/2 cup good quality buttermilk
- 1/2 cup sour cream
- 1/4 cup mayonnaise (I particularly like Japanese Kewpie mayo)
- 1 T lemon juice
- 1/2 t garlic powder
- 1 T high quality extra virgin olive oil
- 1 t – 1 T Worcestershire sauce, to taste
- Kosher salt and fresh ground pepper
- A handful of chopped fresh herbs, such as chives, dill or tarragon
Instructions
- Mash the blue cheese up with a fork leaving some larger crumbles. Whisk in buttermilk, sour cream, mayonnaise, lemon juice, garlic powder and olive oil. Season with salt and pepper.
- Refrigerate until ready to use. Right before serving stir in fresh herbs.
- Will keep in the fridge for a week.
Notes
- I prefer garlic powder as it dissolves into the dressing and provides uniform flavor. You can also use a very finely minced garlic.
