Summertime refresher for a crowd

Nothing is better than ice cold watermelon in the heat of the summer. Except, perhaps, this refreshingly delicious cocktail made from pureed watermelon, fresh lime juice, white rum and St. Germain.  

St. Germain

St Germain is an aromatic French liqueur made from elderflowers that grow wild in the French Alps. The flowers are collected by hand and transported by bicycle to village collection depots where they are promptly macerated to preserve their essence. Chef Pascal Olhats introduced me to St. Germain several years ago. Today, St. Germain is used by everyone making artisanal cocktails, and with good reason, for this nectar adds deliciousness to nearly everything it touches.   Each bottle is individually numbered. St. Germain is made without preservatives, so once opened it should be consumed within 6 months. Expired bottles of St. Germain have not been a big problem in our household, however.

Everyone in our family loves watermelon, even our Frenchie Chubby.

This watermelon cooler is made from pureed watermelon, fresh lime juice, white rum, St. Germain and topped with sparkling water. Make a big batch for your next barbecue.

Watermelon Summer Cooler

This watermelon cooler is made from pureed watermelon, fresh lime juice, white rum, St. Germain and topped with sparkling water. Make a big batch for your next barbecue.

Ingredients

Scale
  • 11 cups cubed seedless watermelon
  • 5 ounces fresh lime juice
  • 1 1/2 cups white rum
  • 1/2 cup St. Germain
  • Sparkling water
  • Mint springs and lime wheels for garnish (optional)

Instructions

  1. Place watermelon cubes in a blender and puree. You should have 6 cups of puree when you are finished. Depending on the size of your blender, you may need to do this in two batches.
  2. Mix the watermelon puree, lime juice, rum and St. Germain in a large pitcher. Serve over ice with a splash of sparkling water. Garnish each glass with a lime wheel and a sprig of mint.
