Don't you just love a bacon weave?

As a cook you can always count on bacon to grab people's attention and get their salivary glands watering. But when you weave bacon, people get really excited. This easy breakfast starts with a woven bacon patty that is baked until nearly done and then topped with an egg, a handful of tomatoes and finished up in the oven.

Double woven bacon patty

I begin by making a double woven bacon patty. I weave 6 pieces of bacon, starting by laying three pieces of bacon side-by-side in a roasting pan like this:

If your bacon is wider at one end of the strip than the other, places the wide side of one strip next to the narrow side of the next strip.

Start weaving the remaining three pieces of bacon like this:

After you have woven in three strips fold the vertical strips of bacon back over the weave like this:

Now weave the horizontal strips back through the vertical strips like this:

Voila! Your bacon patty!

Optional garnishes

You can eat this bacon and egg skillet simply or take it over the top with garnishes. Think dice avocado, some fresh spinach, and salsa.

Eggs and tomatoes baked on top of a woven bacon patty is simple and fun to make. Served in miniature cast iron skillets, these easy breakfasts are as enticing as they are delicious.

Ingredients

Scale
  • 6 slices bacon
  • 12 eggs (your choice)
  • 8 cherry tomatoes
  • Parsley for garnish

Instructions

  1. Heat oven to 400 degrees. Lay three pieces of bacon side-by-side in a roasting pan. Make woven bacon patty following instructions above.
  2. Bake for 10-12 minutes and flip the bacon weave over. Bake for another 10-12 minutes, until the bacon looks almost done. Remove from the oven and lay on a paper-towel lined plate.
  3. Pat off the extra grease and place the bacon weave in a 6.5″ cast iron skillet. Crack eggs into the center of the bacon and scatter tomatoes on top of the eggs. Return to oven for another 8 – 10 minutes, until desired doneness.

Notes

Baking time will vary depending on how thick your bacon is. Keep a close eye on the bacon to make sure you don’t overcook. Servings will depend on how hungry you are. I am happy to share one of these skillets with someone else. My son, however, can take down a whole skillet by himself, no problem.
