Marinated in Thai seasonings of lime, fish sauce, brown sugar and chili peppers, this flank steak is mouth-wateringly flavorful and tender. For the best flavor and tenderness marinate at least 3 hours before grilling.

A few tricks

Flank steak is a grainy, flavorful meat that is not naturally tender. There are five tricks to making tender flank steak:

  1. Physically tenderizing with a kitchen mallet
  2. Marinating in acid - think citrus, wine or vinegar
  3. Cook only to medium rare
  4. Rest 10 minutes before slicing
  5. Slicing across the grain and cutting down at a diagonal angle

Thai-style grilled flank steak

This Thai-style flank steak is simple, but wonderfully flavorful. Plan on 10 minutes to prepare, 3 or more hours to marinate, and 10 minutes to grill. You won’t be disappointed!

Ingredients

Scale
  • 3 pounds flank steak
  • Zest from 1 lime
  • 1/3 cup lime juice
  • 1/3 cup fish sauce
  • 2 cloves garlic, minced
  • 2” finger of ginger, peeled and minced
  • 1 Thai chili or jalapeno pepper, sliced (optional)
  • 2 T brown sugar
  • 1 t red pepper flakes
  • 2 green onions, thinly sliced
  • 1/4 cup canola or sunflower oil

Instructions

  1. Tenderize steak by pounding it on both sides with a meat tenderizer. The steak will flatten out as you pound it.
  2. Mix the remaining ingredients together and put steak and marinade in a plastic bag or in a glass or stainless steel bowl. Marinate for at least 3 hours.
  3. Heat grill to medium high and grill 4-5 minutes on each side. Remove from grill and let rest 10 minutes before slicing. Slice thinly, across the grain and downwards at a diagonal angle.

    This recipe was delicious! A light flavorful, alternative to flank steak marinade. My family loved it and left-overs were fabulous the next day!! Thanks Kim!

      So glad you liked it Jamie. This steak makes a wonderful salad. Add lettuce, mangos and rice noodles, etc… You can double the marinade and reserve half for the dressing and half for the marinade.
