A great cocktail snack inspired by the roasted olives served at Mountain Standard in Vail, Colorado. Pair with a big zin, a dry sauvignon blanc or a martini. Perfect for a cool autumn or cold winter day.

Ingredients

- 1 cup assorted pitted olives
- 1 T chopped fresh rosemary
- 1/4 cup golden raisins
- 1 T olive oil
- 2 T toasted pine nuts
Instructions
- Heat your oven to 400 degrees. In a shallow pan mix the first 4 ingredients. Pop in the oven for four minutes. Remove from the oven and stir in the pine nuts. Return to the oven for 1 -2 minutes, taking care that the pine nuts do not burn. Remove from oven and serve.
