Great cocktail snack

Recently, my husband and I ate at Mountain Standard in Vail, Colorado and ordered this simple but very tasty snack that goes well with a glass of wine or a cocktail. I'm thinking a spicy zin, a dry sauv blanc or a great martini. Perfect for a cool Winter evening.

Roasted olives with yellow raisins and rosemary

A great cocktail snack inspired by the roasted olives served at Mountain Standard in Vail, Colorado. Pair with a big zin, a dry sauvignon blanc or a martini. Perfect for a cool autumn or cold winter day.

Ingredients

Scale
  • 1 cup assorted pitted olives
  • 1 T chopped fresh rosemary
  • 1/4 cup golden raisins
  • 1 T olive oil
  • 2 T toasted pine nuts

Instructions

  1. Heat your oven to 400 degrees. In a shallow pan mix the first 4 ingredients. Pop in the oven for four minutes. Remove from the oven and stir in the pine nuts. Return to the oven for 1 -2 minutes, taking care that the pine nuts do not burn. Remove from oven and serve.
