Watermelon, Feta & Tomato Kabobs | Something New For Dinner

Summer appetizers should be simple, fresh, easy-to-eat and require little or no kitchen time. These fruit and cheese kabobs satisfy all four requirements. Skewer chunks of watermelon, feta and cherry tomatoes on these cute bamboo skewers. drizzle with balsamic reduction and season with crunchy Maldon sea salt and fresh ground pepper. Done! How to Make Balsamic Reduction

Balsamic reduction is just like what it sounds, balsamic vinegar reduced so that it is thicker and more concentrated. It is simple to make and there are all kinds of ways to use this delectable liquid to garnish your food. The beauty of balsamic reduction is it is thick so you can drizzle it and it will stick and not just run off the plate. Put a cup of balsamic vinegar in a non-stick pan. Bring to a boil over medium high heat. Reduce heat to low and allow to simmer for about 10 minutes. When volume is reduced by half and the vinegar coats the back of a spoon you are done.

 

Options: some people like to add a little sugar or honey to their reduction at the beginning of the process. It is a matter of personal choice and the taste of the balsamic vinegar you are using. Taste your vinegar before you reduce it to determine if you want to add a little sweetener. Store the balsamic reduction in the fridge.

These skewers are perfect no-cook, super-easy summer appetizers. I have not included ingredient amounts as the recipe can be created for just a couple people or increased for a large bash. Just remember one watermelon square, one cube feta, one cherry tomato, one basil leaf and one mint leaf per skewer. Time to prepare depends on how many skewers you are making.

Ingredients

Watermelon, sliced into 1 ½” cubes

Feta cheese, cut in 1” cubes

Cherry tomatoes

Fresh mint leaves

Fresh basil leaves

Balsamic reduction

Maldon sea salt

Fresh ground pepper

4″ Bamboo skewers

Instructions

  1. On each skewer, thread one basil leaf around a cube of watermelon, followed by a mint leaf around a cube of feta cheese, finishing with a cherry tomato.
  2. Arrange skewers on a serving platter and drizzle with balsamic reduction. Sprinkle with Maldon sea salt and fresh ground pepper.

 

Notes

I have not included ingredient quantities, as this is really not so much a recipe as a method. Adjust quantities to the size of your party.

    I am very excited about making this appetizer on the 4th of July in Catalina. It will be easy to assemble on the boat and I know it’s fresh flavors will be a hit at our BBQ!
