Fresh tropical fruit, ginger, mint and cilantro make this a refreshing and multi-purpose salsa. Serve it with Thai coconut sea bass with tropical fruit salsa, or with simple grilled fish, chicken, steak or tacos. Garnishing your food with tropical fruit salsa is like taking your meal on vacation.

Tips
- Use a food processor or Cuisinart mini-prep to finely mince the ginger in a jiffy.
- See my posts on how to peel ginger, cut mango, tools for zesting and juicing limes and prepare cilantro before beginning this recipe.
- Salsa will keep in the fridge for a couple days.
Tropical fruit salsa
Fresh tropical fruit, garlic, ginger, mint and cilantro make this a refreshing and multi-purpose salsa.

Ingredients

- 1 mango, peeled and chopped in 1/2″ cubes
- 1 cup pineapple, chopped in 1/2″ cubes
- 1/2 red bell pepper, seeded and chopped in 1/2″ pieces
- Kernels from 1 ear white corn
- 1 1/2 T fresh ginger, peeled and minced
- 1 large handful cilantro, washed and chopped
- 1 large handful fresh mint, washed and chopped
- Juice and zest from 1 lime
- Couple dashes of ancho chili powder (to taste)
- Salt and pepper (to taste)
Instructions
- Mix all ingredients together in a bowl. Taste to see if more lime, chili powder, salt and pepper are needed.
